We’re excited to introduce our second release this year from Ture Waji of Sookoo Coffee: Tima. Tima, like Bookkisa, is a sub-Kebele within the Guji zone. Despite both coffees being processed at the same place, in the same way, and being of the same varieties, the unique terroir of Tima imparts a distinct profile. This beautiful lot from Tima is full of intense citrus, florals, and distinct fruitiness, standing out as one of the highest quality Ethiopian lots we have tasted this season.
We’re in our second year of purchasing coffee from Ture Waji. Last year, we had the naturally processed coffee from Bookkisa, which received fantastic feedback from our partners. This year, we were thrilled to see the washed coffee on offer from our importing partner, Osito. The coffee has proven to be everything it was described to be and more!
Ture Waji, known as “The King of Guji,” founded Sookoo Coffee in 2018. His company operates in the Guji zone of Ethiopia, focusing on producing high-quality, traceable, and sustainable coffee. Sookoo Coffee is renowned for its meticulous processing methods, which include extensive sorting of cherries and careful drying protocols to ensure optimal flavor development. They also prioritize education and support for local farmers, offering pre-harvest loans and paying premium prices for top-quality cherries.
